Sherry Vinegar is our most used vinegar. It has the unique ability to deepen and brighten flavours at the same time. More rounded than red wine vinegar, more complex than apple cider, less cloying than balsamic. Add a few drops to a finished dish, as you would lemon juice or fish sauce. Or use it half-and-half with another vinegar (or lemon juice) in a dressing.
Valdespino is a family-run bodega in Jerez, Andalucia. Its story dates back to 1264, when Don Alfonso Valdespino fought alongside King Alonso to reclaim the city of Jerez from the Moors. Don Alfonso Valdespino was rewarded with land in Jerez which has cultivated grapes ever since.
