What is WO Sauce?

WO Sauce is Poon’s interpretation of the famous Cantonese XO sauce, a luxury condiment traditionally made with dried seafood, cured meats and chilli.

Unable to source dried scallops in the UK, the Poon family created their own version using:

• Salted shrimp
• Their signature wind-dried bacon
• Aromatic garlic and onion
• Chilli flakes and red pepper

The result is a rich, savoury condiment with layers of sweetness, saltiness, gentle heat and intense umami.

The name WO Sauce is a playful nod to XO Sauce—”W is almost X”—and it has since become a cult favourite among chefs and food lovers.
